The quickest way to make a pizza sauce is avoiding it all together.
The Simplest Sauce:
- Tomatoes (any variety)
- Salt
- Olive oil
Slice your tomatoes thinly. Place your tomatoes on a hot pizza crust. Dust the tomatoes with sea salt. Finish with a mist or sprinkle of olive oil. That’s it! Now you can begin to layer your toppings.
Quick Pizza Sauces :
- Tomatoes or canned tomatoes
- Olive Oil
- Salt
- Garlic ( minced) or garlic powder
- Italian herbs
- optional tomato paste
There are several ways to tackle this. If you are using fresh tomatoes you should wash and chop them. 2-2.5 cups of chopped tomatoes will yield enough sauce for a couple of pizzas. If you are using canned tomato it is best to get chopped tomato or a purée. If you have whole or crushed tomatoes use a food processor or immersion blender.
In a small sauce pan heat 1-2 tbs of olive oil. If you are using fresh garlic add it to the olive oil on medium heat. Allow the garlic to cook in the olive oil for approximately 5 minutes then add the tomatoes. The amount of salt you add to your sauce depends on your dietary preference. I would add approximately 1.5 tsp of salt. Bring the sauce to a simmer. On medium heat cover your sauce pan and cook for 20 minutes (stir occasionally).
Your tomatoes should be softened and resembling a sauce. If you like a thicker sauce you can add a spoonful of tomato paste now. Add your garlic powder and Italian herbs and cover for another 10 minutes.
If you want a smooth sauce you can use an immersion blender. That’s it!
You are not limited to these ingredients. Often I will grate a carrot and add this to the tomatoes. If you have a picky eater at home and you want to sneak some greens into their diet do it with the sauce.
Picky Kids Sauce
- Tomatoes (fresh or canned)
- Garlic (minced) or garlic powder
- Carrot (grated)
- Olive oil
- Spinach (1 cup for every 2 cups of tomato)
- Italian herbs
- tomato paste (optional)
In a food processor place your chopped tomatoes, garlic, carrot and spinach. Pulse until nicely blended. Heat your olive oil in a small sauce pan and add your sauce. Follow the directions above.
When you add your toppings to your pizza this green powered sauce will be totally disguised. It works like a charm.
